2016 Yorkville Highlands Côt (Malbec)

Côt as a varietal for the Loire Valley is found predominately in the region of Touraine, where a small amount of acreage is lovingly tended by an equally small number of dedicated farmers. In the rest of the world, Côt is more commonly known as Malbec, and its big, bold presence makes a noticeable statement. Our iteration, hailing again from established vines in the Yorkville Highland appellation of Mendocino County, takes a different approach. Hewing more to the acid driven profiles of the wines of the Loire, our Côt was hand harvested and gently sorted into a small stainless steel tank, then sealed for a number of days before fermentation began in an attempt to mimic the stylistic benefits of carbonic maceration. The temperature was kept low and the fermenting must bucketed over twice daily for exceptionally soft extraction. This wine spent its entire life in stainless steel and more closely resembles Gamay from Beaujolais than its more robust North and South American brethren.
